Chewy Cookie Cake Recipe

Ingredients:

For The cake:

  • One large egg + 1 egg yolk
  • 2 cups all-purpose flour
  • 3/4 cup softened unsalted butter
  • 1 cup packed dark brown sugar
  • 2 tsp vanilla extract
  • 1 tsp baking soda
  • 2 tsp cornstarch
  • 1 1/2 cup semi-sweet chocolate chips
  • 1/2 tsp salt

Step 1

  • Begin by preheating the oven to 350°F.
  • Grease a 9-inch cake pan with nonstick. Set it aside.
  • Also, set out the eggs along with the butter to come to room temperature. Note: Always use eggs at room temperature as they evenly combine into your cookie dough – ensuring a smooth texture in every bite of the cookie cake.

  • Utilizing a stand mixer fitted with the paddle attachment, whisk the butter for 1 minute on medium speed in a large bowl. Beat until perfectly creamy and smooth.
  • Then put in the brown sugar and whisk on medium speed until creamy.
  • Crack in the egg, egg yolk, and vanilla then again beat on medium-high speed until everything combines well.
  • Also, scour down the sides and bottom of the bowl as required.
  • In another bowl, add flour, baking soda, cornstarch, and salt.
  • Gradually mix dry ingredients into the egg batter. Beat on low speed until mixed. The cookie dough will be pretty thick in consistency.
  • Include 1 and 1/4 cups chocolate chips and stir for around 5 seconds till evenly distributed.

Step 3

  • Put the cookie dough uniformly into the prepared cake pan.
  • Now, bake it for 20 to 25 minutes. You will see that the cake is lightly golden brown when done thoroughly.
  • You may have to cover the cookie cake with aluminum foil loosely after 15 minutes to avoid heavy browning along the sides of the cake.
  • Prick a toothpick in the center of the cake if it comes clean means the cake is ready.
  • Transfer the pan onto a wire rack. Allow it to cool completely.
  • After that, use a sharp knife to loosen the edges of the cake from the pan and transfer it to a serving plate.
