Zucchini Chocolate Brownies

This fudgy moist cake with zucchini filling and frosting will surely make you want more.

Preparation time – 15 minutes

Cooking Time – 30 minutes

Ingredients

  • Vegetable oil – ½ cup
  • Walnuts – ½ cup, chopped
  • White sugar – 1 ½ cups
  • Baking soda – 1 ½ tsp
  • Flour – 2 cups
  • Vanilla extract – 2 tsp
  • Salt – 1 Tsp
  • Cocoa powder – ½ cup, unsweetened
  • Zucchini – 2 cups, shredded

For Frosting

  • Milk – ¼ cup
  • Margarine – ¼ cup
  • Cocoa powder – 6 tbsp, unsweetened
  • Vanilla extract – ½ tsp
  • Confectioner’s sugar – 2 cups

Directions

  • In a large bowl, mix vanilla extract, oil, and sugar very well.
  • Add the flour, baking soda, salt, and cocoa powder and mix again.
  • Pour the walnuts and zucchini and give them a good mix.
  • Take a baking dish of 9*13 inches. Grease it and sprinkle a little flour. Pour the cake batter into the pan.
  • Heat the oven at 350 degrees Fahrenheit.  Put in the baking pan and bake for about 30 minutes. Take it out and cool.
  • Meanwhile, melt the margarine along with cocoa and allow it to cool for some time.
  • In another bowl, combine vanilla extract, milk and confectioner’s sugar. Add in the melted butter and cocoa. Your frosting is ready.
  • Spread this frosting over the cake, cut into square pieces, and serve.

Pumpkin And Chocolate Chip Brownies

Pumpkin, chocolates, and spices make it extremely palatable. If its fall and you are willing to make an innovative dessert, it has to be this.

Preparation time – 20 minutes

Cooking Time – 40 minutes

Ingredients

  • Flour – ¾ cup
  • Cocoa powder – ¼ cup
  • Butter – ¾ cup, melted
  • Pumpkin puree – ½ cup
  • Salt – ½ tsp
  • Eggs – 3
  • White sugar -1 ½ cups
  • Baking powder – ½ tsp
  • Vanilla extract – 2 tsp
  • Chocolate chips – ½ cup
  • Walnuts – ½ cup, chopped
  • Powdered cinnamon, nutmeg, and clove – ½ tsp each

Directions

  • Mix eggs, sugar, butter and vanilla extract in a bowl. Add the flour, salt, and baking powder. Mix well and divide them into 2 separate bowls. 
  • In one bowl, add the cocoa powder along with chocolate chips. In another, add the pumpkin, walnuts and cinnamon, nutmeg and clove powder.
  • Preheat the oven at 350 degrees Fahrenheit. Take an 8*8 inches baking dish and grease it.
  • Spread ½ of the chocolate batter into the greased baking dish. On its top, add half of the pumpkin batter. Repeat the layers and make sure to end it with pumpkin layer at the top.
  • Put in the baking dish inside the oven. Bake for about 45 minutes. Take it out and let it cool. Cut into squares and serve.
